MAKES 4 SERVINGS

8 ounces ziti (about 3 cups)

1 pound chicken breast tenders or thinly sliced boneless, skinless chicken breast, cut into bite-size chunks

1/4 teaspoon garlic powder

3 small zucchini, trimmed, halved lengthwise, and cut into 1/4"-thick slices

1 tablespoon olive oil

1 cup chunky tomato sauce

2 ounces thinkly sliced prosciutto, torn into small pieces

2/3 cup grated Parmesan cheese


Directions

1. Prepare the pasta according to the package directions.

2. Meanwhile, sprinkle the chicken with the garlic powder.

3. Add the zucchini to the pasta cooking water about 1 1/2 minutes before the pasta is done. Drain the pasta and zucchini.

4. In the pasta pot, heat the oil over high heat. Add the chicken and cook, stirring occasionally, for 4 minutes. Pour the tomato sauce over the chicken and simmer until cooked through, for about 3 minutes longer.

5. Add the zucchini and pasta to the chicken and bring just to a simmer, stirring often. Mix in the prosciutto. Top each serving with the cheese.
